Meatless Monday – Buddha Bowl

Tonight’s bowl is from Minimalist Baker.  It has chickpeas, kale, sweet potatoes, with a tahini lemon dressing.  I added carrots and brussels sprouts, and cooked some of the ingredients in the air fryer.  Also I served it over rice.

I liked the sauce, it added a lot of flavor for such a simple concoction (tahini, lemon juice and water).  It was very filling.  I couldn’t finish it all.  I might put the little bit leftover into a taco tomorrow.
