Burger Bowl

I just got back from a trip to California.  Vacation from doing dishes and figuring out what to cook!  Tonight was our belated Meatless Monday.  I baked some Trader Joe’s Thai sweet chili burgers.  The idea of those flavored on a bun did not sound appealing so I chopped them up and served them in rice bowls, along with steamed carrots, peas and edamame.  I mixed up a sauce from Kikkoman orange sauce, gochujang, soy sauce and sambal oelek.

I served it with some Trader Joe’s roasted wasabi nori.  It is roasted with oil.  Unfortunately all of the oil roasted nori I’ve tried has gone rancid on me, including this one with a use by date of November.  I had this happen with another brand, similarly packaged.  I’m going to stick with oil-free nori from now on.

Meatless Monday – Buddha Bowl

Tonight’s bowl is from Minimalist Baker.  It has chickpeas, kale, sweet potatoes, with a tahini lemon dressing.  I added carrots and brussels sprouts, and cooked some of the ingredients in the air fryer.  Also I served it over rice.

I liked the sauce, it added a lot of flavor for such a simple concoction (tahini, lemon juice and water).  It was very filling.  I couldn’t finish it all.  I might put the little bit leftover into a taco tomorrow.
