Meatless Monday – Buffalo Veggie Burgers

Last time I went grocery shopping, the woman next to me at the veggie burger section was picking out a package and her friend said not to get the buffalo chicken ones.  I asked her what did she not like about them and she said they were too spicy.  Of course I had to try them!  They are the Morningstar Farms brand.  We had them on ciabatta rolls with Gorgonzola cheese, avocado and lettuce.


I didn’t think they were super spicy.  They remind me of Boca burger’s spicy chicken flavor.

I am taking the semi-homemade route lately in order to simplify my life.  Hence the tater tots as a side.  Over the weekend we had meatball sandwiches made with frozen packaged meatballs, and jarred marinara.  Last night we had corn and cheese ravioli with the same marinara.

Meatless Monday – Tacos

Recently I came across an intriguing recipe for vegetarian tacos with pineapple.  The filling also includes potatoes and mushrooms.  I added extras like avocado and salsa (instead of tomatoes).


The recipe is called “Best Damn Vegetarian Tacos.”  I don’t know if it is because of the substitutions and additions I made, but I didn’t think they were all that great.  Not bad, just not great.

Meatless Monday – Split Pea Soup

Today was a good bread and soup day.


I found a recipe for split pea soup in this old cookbook.  It has split peas, cumin, soy sauce, carrots, celery, onions garlic, water and bay leaf.  I added kale to use some up.  The bread is from the sale rack at Walmart.


When I was a child I had plastic surgery for a dog bite scar on my face, and for what seemed like forever, I had to eat oatmeal and split pea soup.  For the longest time I couldn’t stand either!  I’m so glad I got over it.
