Meatless Monday – Chickpea Sammmies

Recently I got “Vegan with a Vengeance” from the library.  One of the recipes I wanted to try was for Chickpea Sammies.  It’s supposed to be a “substitute” for tuna, using chickpeas, vegan mayo, carrots, apple cider vinegar, and a few other ingredients.  It really does look like tuna salad.


I had a hard time mashing the beans with a potato masher.  All it seemed to do is make the skins come off.  I ended up crumbling them with my fingers, like making pastry dough.

To make the sandwiches more “dinner-like,” I made them open faces, topped with cheese and warmed under the broiler.


I really liked this recipe and look forward to trying more from this cookbook.
