Copycat Panera

I was in Palm Springs last week for Barry Manilow’s “A Gift of Love III” concerts.  One night we went to Panera.  Two of us got the lentil quinoa bowl, and I got a salad with quinoa.  I found a copycat recipe for the soup bowl that sounded easy.  Instead of cooked lentils I used dried.  While it was cooking, I thought it looked watery so I added more, but I think the original amount would have been plenty.  I only had a taste at the restaurant so I can’t say how close it is to the real thing.  I like the addition of quinoa.  I added carrots and celery.  Oh, I also poached the eggs instead of hard-boiling.  I’m going to add berbere seasoning to the leftovers tomorrow.  A brown-n-serve baguette completed the dinner.  Yum.

We meant to go to Native Foods Restaurant while I was in CA.  Maybe next time.  Since I was last there, it has changed from a sit-down place to more of a fast-food type service.
