Meatless Monday – Tofu Red Curry

Tonight was a “clean out the refrigerator” dinner.  Basically followed the recipe on the back of the label of red curry paste, using coconut milk, curry paste, brown sugar, along with veggies and tofu.


I didn’t add fish sauce because I was too lazy to retrieve it from my neighbor.  Maybe I should have made the effort because I felt it was missing something, although it was good.  This was dinner for our 24th anniversary!

Meatless Monday – Baked Pasta

This turned out better than I expected!  I had Trader Joe’s Puttanesca sauce, ricotta cheese, queso fresco and mozzarella to use up.  Basically I layered penne mixed with sauce, dollops of ricotta and queso fresco, a light layer of sauce, more pasta, more sauce, then covered with mozzarella.  Baked covered at 350 for about half an hour, then removed foil and baked for another 10 minutes.  I think the light layer of sauce kept it from drying out.  I’m still on a pasta kick from my Sopranos marathon.  And then I watched “Giada in Italy” this morning.  I love the super long fusilli!

Weekend Lunches

Somewhere, I can’t remember exactly where, I saw an egg salad with avocado.  Yesterday’s lunch was deviled eggs with avocado mixed in, plus maple cheese toast (from Amy Thielen), and Knox Blox.  I was surprised at how strong the avocado flavor was, given that it is subtle to begin with.  It was a nice change.


Today we had egg salad with avocado, on English muffins.  Again, it was a different take on the ordinary.  Yum.


Now to find a recipe for a spaghetti casserole using ricotta.  I have about 8 ounces left from something else I made.

Meatless Monday – Pasta

I haven’t had much available in my Netflix queue lately so we’ve been watching “The Sopranos.”  I had no idea that food was featured so prominently in the show!  The episode where the Sopranos’ basement is wired showed a shelf-full of De Cecco pasta.  I happened to have a box in my pantry.  (I usually buy Barilla.)

Anyway, we had De Cecco fettuccine with Trader Joe’s puttanesca sauce, topped with a Boca Chik’n patty (12 grams of protein).


Sorry, but I like Barilla better.  To me the De Cecco has a starchy, flour-y taste.  I didn’t realize I had become such a pasta snob.

We have a heat wave coming over the weekend.  I was almost going to stop at the store on the way home from errands but worried we might lose power.  What better excuse to use up what’s in the freezer and pantry.  I already found a can of salsa that had “exploded.”  Fortunately I caught it before it made too much of a mess.  If I get lazy or uninspired we’ll end up eating ramen, spaghetti with butter & cheese, and quesadillas.
