Meatless Monday – Moosewood Pasta Primavera

Asparagus was on sale for $1.98/pound last week, I’m guessing maybe because of Valentine’s Day.  Originally I was going to use it for ramen but instead opted for pasta primavera, from the Moosewood Restaurant Favorites cookbook.  Instead of fresh tomatoes I used some I had roasted from last summer.  For the red pepper, I added some chopped red, yellow & green peppers, also frozen from the summer.  On a cold day, the thought of primavera brightened things up around here.
