Happy National Homemade Soup Day!

I made an Americanized version of udon soup for National Homemade Soup Day.  It was a good way to use up leftover Korean beef and clean out the vegetable bin.  For the “stock,” I used half a packet of ramen seasoning, since I don’t use the whole thing when I cook Top Ramen.  The noodles were regular udon.  This is my latest addiction.  I bought a giant package of udon thinking it would take forever to use it and I’ve gone through about half of it already.


I haven’t posted lately but that doesn’t mean I haven’t been cooking.  I just have gotten lazy about posting and then now I have lots of pics and the thought of doing a post gets to feel overwhelming.
