Last Meatless Monday of the Year! – Gnocchi with Pesto

We had leftovers for dinner tonight.  Gnocchi and pesto sauce I had frozen, leftover cornbread, and salad with cottage cheese and feta dressing.  Nothing special, but I wanted the last Monday of the year to be meatless!

Sweet Potato Quesadillas

Last night I talked myself into splurging and picked up a deli sandwich from Firehouse Subs.  I got a New York Steamer, which has pastrami, corned beef, and provolone.  I had heard a good comment about the place so wanted to try it.  It was OK.  I didn’t realize that this is one of the sandwiches with no lettuce, tomato or onion.  I felt bloated all evening.  I like cooking but sometimes it’s a chore.  Anyway, I got inspired to eat at home more.

I still have half a dozen or so jumbo sweet potatoes from the end of the season farmers market.  I pulled out my copy of the “Moosewood Restaurant Favorites” and found a recipe for Sweet Potato Quesadillas.  (Here’s a recipe that’s close.)  The filling has grated sweet potatoes, onion, garlic, and spices, plus cheese.  I added avocado, cilantro and pickled jalapenos too.

I made a big batch of the filling.  I’m glad I did, since it’s really good.  Now I have something in the refrigerator that I can put together a quick lunch or dinner with.

Meatless Monday – Veggie Melt Take-out

I ended up picking up a veggie melt from Steak ‘N Shake for dinner tonight.  It has pepper jack cheese, lettuce, tomato, guacamole, onion, and portobello mushrooms.  Everything comes with fries so I tried the parmesan garlic fries.  Even though I ate a few fries in the car on the way home, I noticed that they serve a lot less than when they first opened.

Man, was this salty!!!!  I think it was the mushrooms.  I looked up the nutrition facts online and the sandwich has over 1,000 mg of sodium.  The melts with meat are more in the 600 mg range.  Why do they have to put so much salt in it????

I’ve had similar experiences with the veggie options at other places.  The tofu sofritas at Chipotle were salty, as well as the Malal Kofta (veggie balls) at Taj Mahal restaurant.  On the other hand, similar entrees with meat were more balanced.

One of my friends cooks in bulk so I think I’ll just have to set aside a day to make freezer meals.  Days like today, when we get home at 5:30, I just don’t feel like cooking.

Turkey Miso Udon

We are officially done with Thanksgiving leftovers.  Tonight I made a turkey version of chicken miso ramen.  I sauteed some turnip greens, kale and corn, put that in a bowl with udon, turkey, faux chicken (for me), and finished it with a ladle of turkey stock with miso.  It was good!

Turkey-less Tuesday

We are still working on leftover turkey.  I think we’ve had it in some form every day since Thanksgiving.  I hate to freeze it because the texture gets weird.  Today we took a break from turkey for Turkey-less Tuesday.  We had Spam musubi, and with produce from the farmers market, roasted turnips (with olive and parmesan cheese) and kale chips.

For the rest of the week, I have some leftover turkey enchiladas, turkey jook (Chinese soup),, and I want to make white bean turkey chili.
