Meatless Monday – Clearing Out Leftovers

Originally I had planned to make sweet potato chili for tonight, or make enchiladas from leftover lentils, but leftovers won out.  We had leftover cheese tortellini with Trader Joe’s puttanesca sauce, baked potatoes with cottage cheese (I like it better than sour cream on potatoes, plus it’s more nutritious), and salad.  Easy to throw together.  I love baked potatoes.  They’re one of those things I think “we should have this more often” but don’t think of, and they’re so easy to prepare.
