Meatless Monday – Clearing Out Leftovers

Originally I had planned to make sweet potato chili for tonight, or make enchiladas from leftover lentils, but leftovers won out.  We had leftover cheese tortellini with Trader Joe’s puttanesca sauce, baked potatoes with cottage cheese (I like it better than sour cream on potatoes, plus it’s more nutritious), and salad.  Easy to throw together.  I love baked potatoes.  They’re one of those things I think “we should have this more often” but don’t think of, and they’re so easy to prepare.

Tired of Cooking

I’ve been tired of cooking lately.  Tonight I was just going to have leftovers but I got even too lazy for that.  Instead I picked up some burgers & fries from a new place in town called Steak n’ Shake.  They have “steakburgers” that I think are supposed to be made from steak.  The place here opened recently.  The “regular” comes with two patties but we just got singles.


They came with onions, pickles, tomato, and lettuce.  It was tasty while I was eating it but now I feel “mad” at myself for not just having leftovers.  Oh, pet peeve…not knowing special deals until I get there…there signs up that said snakes and drinks are half off from 2-4PM and 2-4AM.  I just missed it by like half an hour.  The banana shakes are made with real banana.  I’ll have to try one sometime.

I’m going to try having more discipline and get back into cooking.  Sometimes I just need a break, though.

Meatless Monday – Happy National Linguine Day!

It’s fun hearing about “National … Day” via random posts on Facebook.  Today I learned it was National Linguine Day.  My favorite pasta sauce from Trader Joe’s is their puttanesca.  It’s spicy without having to add any red chili flakes.  So, we had linguine with puttanesca sauce, Italian bread, and salad.


I hate to say it, but I was a little disappointed with the sauce.  I thought it was too fishy-tasting.  I’ve had it before and don’t remember it tasting like this.  I still have half a jar left.  As I had said, it is my favorite TJ pasta sauce, so in the past, I would hate to doctor it up so as not to dilute the flavor.  This time, however, I think I’m going to add some extra bell peppers, onion and garlic to the other half of the jar, to tame the overpowering anchovy flavor.

Veggie Burgers

I’ve still been cooking and taking photos, just haven’t been up to posting about everything.  I hope to get back into the swing of things.  Tonight we had…veggie burgers with bacon!  I know, sort of an oxymoron.  I wanted to use up the bacon (from BLT’s with fresh tomatoes) and I had veggie burgers, so why not.  The veggie burgers were Morningstar Farms Mushroom Lovers Burgers.  I added sauteed onions and pepper, homemade pickles, homegrown tomatoes, and lettuce.  I liked the burger patty because it wasn’t trying to be pretend meat.


Last week I tried Amy’s California Veggie Burgers.  I’ve always seen such positive reviews about Amy’s veggie burgers, so I was kind of disappointed with it.  I think it was the texture.  I did read someone’s review somewhere that their least favorite was the California burger.  I might give Amy’s one more try with a different variety.
