Meatless Monday – Ratatouille Pizza

The produce at the farmers market is in full swing right now.  Everything is ripe and luscious.  I got tomatoes, peaches, eggplant and zucchini this week.


In addition to veggie panini, I was thinking ratatouille, and found a recipe for ratatouille pizza.  The way the vegetables are arranged is similar to how it was done in the animated movie.


I used a Benriner mandoline to make super-thin slices.  I spread some pesto and tomato sauce on the crust, for flavor, and scattered on some chopped bell pepper (hidden to get the picky eater in the house to eat them).  I had some Penzey’s Frozen Pizza Seasoning and sprinkled some of that on too.  The vegetables make a pretty presentation.  Next time I might alternate the three main vegetables, though, so they’re more evenly distributed (go around the edge with a slice each of eggplant, zucchini and tomato, instead of one veggie at a time).
