Tofu Tortas

My shopping bargain of the day was bolillos and tortillas from the local Mexican grocery store, Super Mercado Monterrey.  I got 10 bolillos, 20 flour tortillas, and a stack of corn tortillas for just under $6.  Such a deal.


Our quick dinner was tofu tortas, using the leftover tofu taco filling from Monday.  I split a bolillo, spread on some refried beans, then added the tofu, cheese, avocado, and put it in the Foreman grill.  When it was done, I added jalapenos, tomatoes and lettuce.  I like the grilled sandwich but would like to find a way to toast it so the fluffy bolillo doesn’t get squished.  Easy peasy!
